Also make sure you have a sharpening stone and keep you knife sharp. Don't buy any of those fancy sharpening things either they just ruin your knife.

Tip for mincing garlic! Once you have gone through the first couple chops, you will notice the garlic sticking to the blade of the knife. Use a little olive oil on the garlic at this point to reduce the amount of sticking.

To save time, skip the horizontal cuts into the onion. The onion is already layered, therefore it's unnecessary.

The knife techniques are purely personal preference. I prefer the Japanese style slide cut sort of technique. And also you need a better knife. If you have to use a special grip for decent performance than the handle is probably crappy. edit: and you should not use the same knife for everything. if you're cutting onions or garlic you should use a knife with a thinner stock so it doesn't crush it as much. and always use a smaller knife for peeling, more control and less to get in the way.

Love the video and the carrot cuts. When you diced the Onion you don't need the horizontal cuts, it will still look nice. I just use a silicone pad under my cutting board. Keep the videos coming.
