You julienne wrong. First you have cut it too long, second you dont stack something that small that is a huge no no. And you cut the carrot into a rectangle so all sides are uniform.

*NOTE* avoid moving ingredients around on the cutting board with the edge of the blade. This will roll, or dull the edge and makes honing with a sharpening steel much more difficult.

That part about the knife grip is kind of interesting; I found that when having to dice a large amount of fruit or veggies like onions, potatoes or pumpkin even those who almost never cook will most likely shift to that forward grip naturally as their hand gets tired. It really does give you the highest degree of control over the blade while expending the least amount of strength.
