Authentic Kerala Dishes with my personal Touch 😍 Ingredients Chicken -300gm(with bone) Green chilli-3 finely chopped Ginger – small piece(slice finely ) Garlic- 1 (thin slices) Curry leaves-1 string Pepper powder-less than 1/4tsp Salt-to taste Potato-1 medium Coconut Oil-2tbsp Thin coconut milk-2 cup Thick coconut milk-1/2 cup Water-1/4cup For sauting Onion-1 medium Green chilli-2(long slits) Curry leaves-few Ginger-1tsp thin slices Garam masala- 1/2tsp -fennel seeds(perumjeerakam), 10 cloves(karayam poo), 2 medium stick of cinnamon(patta), 3 cardamom (elakkaya ) 1 star anise (thakkolam) ) Grind well to fine powder.Sieve and use. No need to roast them Method Cut the chicken into small pieces. Wash well with salt. Drain. To the chicken add ginger ,garlic,green chilli ,curry leaves ,pepper powder and salt and mix well with hand … Keep aside for 15 minutes. Then add 1/4 cup of water and pressure cook. 4 whistle is enough. Keep aside.Allow to cool. In between wash one potato peel and cut into cubes and pressure cook it by adding salt and water. Now heat oil in a kadai. Saute onion slices for 3 minutes in medium flame. To that add ginger slices,green chilli slits and curry leaves. Saute them till the onion become translucent. Now add cooked chicken along with stock. Add potato also… To this add 1/4 tsp of garam masala and mix well … Allow to cook for 2 minutes.Slightly mash potato with back of the spoon … Then add thin coconut milk and stir well. Cook for 5 minutes or until the stew start thickening. In that point add our thick coconut milk and stir slowly. Sprinkle the remaining garam masala(1/4 tsp ) if u don’t prefer garam masala decrease the amount. Cook for 2 minutes No need to boil after adding thick milk.Remove from the fire and sprinkle few curry leaves and 1 tsp of coconut oil. Close the kadai for few minutes and serve with appam ,idiyappam ,chapati …. If u want u can roast cashew nuts in ghee and season the stew. Cowboy Stew Recipe 8 regular red potatoes, chunked 2 ½ cups sliced carrots 1 large yellow onion, sliced 1 large jalapeno, chopped 3 (14.5-ounce) cans stewed tomatoes 1 (15-ounce) can tomato sauce 1 (10-ounce) can Rotel 3 (4-ounce) cans chopped green chile 2 tablespoons minced garlic Canola oil 3.5 – 4 lbs. stew meat (elk, beef, etc.) chunked 3 quarts water or beef broth Red River Ranch Original Seasoning or Seasoned Salt and Black Pepper 1. Add all the ingredients, except the canola, stew meat, water and seasoning to a large stock pot. Set aside. 2. Pour a thin layer of the canola oil to the bottom of a large cast iron skillet. Add the meat, season to taste and cook over medium-high heat until all the edges have browned. 3. Stir the meat into the liquid mixture. Bring to a boil over high heat for 20 minutes. Take a pressure cooker ,add all the vegetables along with salt ,onion slices and 1/4 cup of water.1 whistle is enough When the pressure settle down open the cooker , add thin coconut milk along with green chilly ,curry leaves and chopped ginger.Stir well. Allow it to boil and when it become very thick add thick coconut milk to this. Remove from the fire.Check the salt.Finally garnish with 1 tsp coconut oil and string of curry leaves. Close the cooker for 5 minutes. By this time the stew looks like very creamy and medium thick form.So transfer the tasty stew to a serving dish and serve hot with palappam ,dosa etc … Some people used to add garam masala in this recipe.But i dont garam masala in veg stew.So if u like that smell u can add. :)

SLOW COOKER BEEF STEW Servings: 8-10 INGREDIENTS 3 pounds beef chuck roast ⅓ cup flour 1 tablespoon salt ½ tablespoon pepper 1 tablespoon olive oil 1 cup red onion, diced 1 celery stalk, diced 1 carrot, diced, 3 garlic cloves, minced 28 ounces plum tomatoes, canned 2 cups red wine 1 tablespoon fresh parsley, chopped 1 tablespoon fresh sage, chopped 1 bay leaf ½ tablespoon salt PREPARATION In a small bowl, combine flour, salt, and pepper. Rub the flour mixture on the beef, making sure it is covered entirely. Heat oil in large skillet. Sear the meat on every side until golden brown. Transfer meat into slow cooker. Check out more from LearnToCook.com at BEEF STEW RECIPE: Ingredients: 1 lb. beef chuck ½ onion, medium 1/2 celery stalk ½ carrot, large 1 clove garlic 8 oz. red potatoes 6 ea. button mushrooms coarse salt ground black pepper 1.5 oz. flour 2 tbsp vegetable oil 2 cups beef stock 3 oz. stewed tomatoes 1 tsp worcestershire sauce Methods PREPARATION METHOD: 1. Trim the sinews off the meat and cut into 1 inch cubes 2. Peel and cut the onion into small dice 3. Wash the celery and cut into small dice 4. Wash, peel and rewash the carrots and cut into batonnet 5. Peel and crush the garlic. Chop finely 6. Wash, peel and rewash the potatoes and cut into medium dice 7. Remove the stems from the mushrooms and cut them in half COOKING METHOD: 1. Season the beef and lightly coat with flour 2. Heat the oil in a large sauce pan, put in the beef and brown on all sides. You may need to add the meat in stages otherwise the temperature may be too low and the meat will boil rather than fry. Remove and place in a bowl with a paper towel to absorb excess oil 3. Check the amount of oil in the sauce pan and if needed add more to sauté the onions. Add the potatoes and carrots and sauté until lightly golden. Add the celery, garlic and mushrooms and sauté briefly. Remove all ingredients and reserve in a bowl 4. Add ½ cup of the stock to the saucepan and deglaze to loosen all particles from the bottom of the pan 5. Add beef cubes back into the sauce pan, add the remaining stock, stewed tomatoes and Worcestershire sauce. Bring to the boil and reduce to a low simmer, place a lid on top. Simmer for 30-45 minutes then check the meat for tenderness 6. Add the vegetables and stir, cover and simmer for another 20-30 minutes or until vegetables are al dente (firm to the bite) and beef cubes are fork tender 7. This was originally posted on my blog at: Here is the recipe: Ingredients 2 1/2 pounds chuck roast cut into bite sized pieces 2 to 3 tablespoons vegetable oil 1 teaspoon kosher salt 16 ounces chicken stock 16 ounces tomato sauce 1 teaspoon smoked paprika 2 pounds potatoes, cut into bite-sized pieces 8 ounces carrots, cut into bite-sized pieces 2 large onions, cut into bite-sized pieces 1/2 teaspoon garlic powder Directions Brown bite-sized pieces of roast in the Instant Pot on saute in vegetable oil. Salt meat while browning. Once the meat has browned add tomato sauce and chicken stock. Cook the meat on the manual high setting for 30 minutes. Perform a quick release. Then add the garlic powder, smoked paprika, vegetables and cook on the manual setting for 4 minutes. When the stew finishes, you can either perform a quick release or a manual release. INGREDIENTS: FOR THE STEW 8 large tomatoes 3 large onions 4 bell peppers (tartashe) 4 scotch bonnet 1\2 tsp garlic 1\2 tsp ginger 1 tsp thyme 1 tsp curry 40g tomato puree (optional) 2 bullion cubes Meat stock ( Stock powder can be used also) 1/2 cup Vegetable oil 2 Stock cubes (optional) FOR THE MEAT 400g beef 500g chicken 3 scotch bonnet (chopped) 1 tbsp garlic 1 tbsp ginger 1 tbsp thyme 1 tbsp curry 2 bullion cubes 1 tsp Salt 1/2 medium onions (chopped) ***NOTE*** Always taste the stew before adding salt or bullion cubes so as to not add excess. This is because taste buds varies. STEPS FOR MEAT In a pot, add the beef, chopped onions, ginger, garlic, thyme, curry, scotch bonnet (Hot pepper). Stir and steam for 5 mins on medium heat. Add 1.5 cups of water, diced chicken, 1/2 tsp of salt and stir Cook for 10 mins on medium heat Drain the water from the meat (this would be used in making the stew) Transfer the meat to a baking pan a grill or bake until brown( the meat can also be fried as well) Set aside to be used for the stew. STEPS FOR THE STEW Blend tomatoes, pepper, onions, scotch bonnet to a smooth paste. Add 1/2 cup of oil to the pot and heat for 5 mins and pour the blended mix in to the pot. Cook for 30 - 45 mins on medium heat. Add the tomato puree, and cook for another 10 - 15 mins (or until the oil start to surface and the water content has dried). Add the seasonings (thyme, curry, ginger, garlic, bullion cubes, stock cubes) and the meat stock Cook for 10 - 15 mins on medium low heat (this is to infuse the ingredients together and to further ensure the tomatoes has no sour taste). Add the grilled/fried meat to the stew and cook for 10 mins on medium low heat. Serve with any side of your choice.
