Leek and Potato Soup 2 tbsp oil 4 leeks, rinsed and finely chopped, white and light green parts only 2 stalks celery, finely chopped 2 cloves garlic, minced 2 potatoes, peeled and diced 3 cups vegetable broth 1⁄4 cup cream (optional) salt and pepper to taste In a large saucepan, heat oil over medium-high heat. Add leeks and celery and sauté until they begin to soften. Add garlic and sauté for another minute. Add potatoes and vegetable broth and bring to a boil. Reduce heat to low and simmer for about 30 minutes. Add cream. Puree soup with an immersion blender or in batches in a traditional blender. If using a traditional blender, remember: • Only fill your blender 1/3 full. • Remove the centre insert in the lid of your blender to allow hot air to escape. • Cover 3⁄4 of the hole with a kitchen towel to avoid splashes. hallo leute!!! (hi guys!!) For today's video, my good friend - and chef- Christin, joined me to teach us how to make a yummy and super easy grandma-style soup. Totally comfort food. Sorry about the camera shakes.still learning how to hold it, film and cook at the same time! :D Here’s what you need (recipe for 4 people): 3 medium sized potatoes (yukon gold variety is one of the best for this recipe) 2 small onions 3 medium carrots 1 leek (white part) 1 tablespoon butter 2 slices of smoked bacon 3 vienna sausages parsley (opcional) a good baguette (optional) chicken stock —for this recipe we made our own but you can use powdered stock (not the same taste, though) Method Chop all your ingredients (cut into pieces that are all the same size so they'll cook uniformly) Sear your bacon in a hot pot over medium heat until you see a light brownish caramel forming on the bottom of the pot. Add the butter and cook for 1-2 minutes. Add the onions, leek, carrots and potatoes. Over a medium heat, let it simmer for about 15 minutes, stirring every now and then. This step is very important …your veggies are going to “marinate” during this process and you will end up will a much more flavourful soup. Add your stock - make sure your vegetables are all covered by the stock- and cook it over a medium / high heat. When it comes to a boil, cover the pot and lower the heat, leaving it to cook for about 30 minutes or until your vegetables are fully cooked. Mix it all in a blender until smooth and creamy. Slice the sausage and heat it on the soup. Pangat/Pinangat − boiled in salted water with fruit such as tomatoes or ripe mangoes. Palaman/Pinalaman − filled as in siopao, though palaman also refers to the filling in a sandwich. Pinakuluan – boiled. Prito/Pinirito − fried or deep fried. From the Spanish frito. Relleno/Relyeno – stuffed. Tapa/Tinapa – dried and smoked. Add water to a cooking pan. 2. Add diced carrot, onion cubes, diced garlic cloves, sweet corn kernels, chopped coriander, salt and add peppercorns. 3. Close the lid and cook on medium flame. 4. When the water comes to boil, simmer for one hour 5. Sieve and separate the clear stock. (Either discard or use the vegetables as salad). For making the soup: Ingredients: Cooking oil: 1 tablespoon White spring onions (chopped): 1 tablespoon Thinly diced carrot: 1 ½ tablespoon Thinly diced beans: 1 ½ tablespoon Capsicum (medium sized): 1 whole Tomato puree: 2 tablespoons Salt: ½ teaspoon White pepper powder: ½ teaspoon + ½ teaspoon Corn flour: 1 tablespoon Chopped green spring onions: for garnishing Procedure: 1. To another pan, add oil. 2. Add chopped white spring onions. Stir fry for 30 seconds. 3. Add thinly diced carrot, thinly diced beans and add chopped capsicum. Stir fry for one minute. 4. Add tomato puree, salt and white pepper powder. Mix well. 5. Add half of the vegetable stock and preserve the remaining stock in the refrigerator for next use. 6. Add 1 tablespoon cornflour mixed with 1/4th cup of water. Stir continuously while adding the cornflour paste. 7. Add ½ teaspoon white pepper powder for more spicy taste. Mix well. 8. Switch off the flame and garnish with chopped green spring onions. Vegetable Soup is ready to be served.

Add onions and stir until they are well coated. Cover and cook onions for 15 minutes. Remove the lid and season the onions with salt, pepper and sugar. Cook the onions for an additional 30 minutes, stirring often. Onions should be deep golden brown. Once onions are caramelized stir in flour and cook for 1 minute. Add broth and fresh thyme and bring the mixture to a boil. Reduce heat to medium-low and simmer for 30 minutes. Ladle soup into individual, oven-safe bowls and top with crostini and cheese.
