Healthy Vegetable Soup from Maimoona Yasmeen’s Recipes YOU CAN ALSO REACH US ON : Youtube Subscribe - Website - Facebook - Google Plus - Twitter - Instagram - For Stock: Ingredients: Water: 1 litre Carrot: ½ of the whole carrot Onion: one small (35 grams) Garlic cloves: 2 Sweet corn kernels: 1 tablespoon Chopped coriander: a handful Peppercorns: 4 to 5 Salt: ½ teaspoon Procedure: 1. Add water to a cooking pan. 2. Add diced carrot, onion cubes, diced garlic cloves, sweet corn kernels, chopped coriander, salt and add peppercorns. 3. Close the lid and cook on medium flame. 4. When the water comes to boil, simmer for one hour 5. Sieve and separate the clear stock. (Either discard or use the vegetables as salad). For making the soup: Ingredients: Cooking oil: 1 tablespoon White spring onions (chopped): 1 tablespoon Thinly diced carrot: 1 ½ tablespoon Thinly diced beans: 1 ½ tablespoon Capsicum (medium sized): 1 whole Tomato puree: 2 tablespoons Salt: ½ teaspoon White pepper powder: ½ teaspoon + ½ teaspoon Corn flour: 1 tablespoon Chopped green spring onions: for garnishing Procedure: 1. To another pan, add oil. 2. Add chopped white spring onions. Stir fry for 30 seconds. 3. Add thinly diced carrot, thinly diced beans and add chopped capsicum. Stir fry for one minute. 4. Add tomato puree, salt and white pepper powder. Mix well. 5. Add half of the vegetable stock and preserve the remaining stock in the refrigerator for next use. 6. Add 1 tablespoon cornflour mixed with 1/4th cup of water. Stir continuously while adding the cornflour paste. 7. Add ½ teaspoon white pepper powder for more spicy taste. Mix well. 8. Switch off the flame and garnish with chopped green spring onions. Vegetable Soup is ready to be served.

Add the cabbage and carrots and sauté on a medium flame for 1 minute. 4. Add the basic vegetable stock, lemon juice, salt and cornflour-water mixture, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally. 5. Add the coriander and mix well. Serve immediately.

Add onion and celery and cook until softened; about 5 minutes. Add mushrooms and garlic cook for 15 to 20 minutes. Add flour and cook for 1 minute, stirring often. Add red wine and cook until it has reduced by half. Add broth and thyme and simmer for 15 to 30 minutes. Add cream and cook for an additional 5 minutes. Enjoy! Then add 4 tbsp flour to thicken while stirring add 1 cup clam juice 1 cup whole milk 2 cups cubed russet potatoes 1 cup chopped celery bring to a boil, cover, and simmer on low heat for 15 minutes until potatoes are tender. Saute onion until it is translucent and tender (not browned) this takes about 5 minutes. Add in the garlic, asparagus and beans and season with a bit of salt and pepper. Give that all a stir, pour in the veggie broth and crank the heat to high bringing everything to a boil. Reduce down to a simmer and cook for 5 minutes or until the asparagus is fork tender. Shut off the heat and let the soup cool for a few minutes before blending. Working in batches, spoon the soup into your blender, filling the blender no more then 1/4-1/3rd of the way up. Place on the lid, leaving it slightly a jar so steam can escape and blend until the soup is rich and creamy. Repeat until you have finished all the soup. Transfer back to the pot to heat and serve OR store in an airtight container in your fridge for up to 5 days. *I like to serve mine with a some coconut milk drizzled over the top and finely diced peppers. Makes 4 serving.
